Saj Bread I Recipe
Lebanon · Servings: 5

Saj bread (Arabic: خبز الصاج) is a thin, unleavened flatbread baked on a griddle known as a saj.
Ingredients
- ½ cup flour
- 250 g water
- 1 tsp salt
Procedure
- Mix flour and water, adding water gradually, until left with a workable dough. Knead thoroughly.
- Cover the dough and let rest for about 5 minutes. Add salt.
- Separate from dough smaller portions and make into balls. Using a flat surface lined with flour, begin to roll out each ball into a flat piece of dough.
- Place flattened dough on griddle and bake until tender. On a heated griddle, cooking only takes a few seconds. Flip-over and cook the other side for only a few seconds.
- Remove from griddle and allow to cool. Fold and store.
