Ingredients

  • 1 cucumber, chopped in 1 cm cubes
  • 1 tomato, chopped in 1 cm cubes
  • 1 onion, chopped in 1 cm cubes
  • ¼ cup chopped parsley
  • 2 tbsp oil
  • 2 tbsp lemon juice or vinegar
  • ½ tsp salt
  • ½ tsp freshly-ground black pepper
  • 1 tsp za'atar (can substitute ¼ tsp thyme)

Procedure

  1. Mix cucumber, tomato, onion, and parsley.
  2. Mix oil, lemon juice, salt, pepper, and za'atar to make dressing.
  3. Pour dressing over vegetables. Correct seasoning to taste.
