Pezzetti di cavallo (pieces of horse) is a dish from Italy.

Ingredients

  • 1 kg horse meat
  • 1 L tomato sauce
  • Onions, chopped
  • Olive oil (extra virgin)
  • Parsley
  • Carrots
  • Celery
  • Chilli peppers
  • 2 leaves laurel

Procedure

  1. Cut the horse meat in cubes, and fry it in a pan with some onion until it turns brown.
  2. Add tomato sauce.
  3. Add carrots, parsley, celery, laurel, and chilli peppers to taste.
  4. Cook on low heat (preferably in a clay pot).
  5. Skim the foam on the top and let simmer for 4 hours.
  6. Serve with home-made bread.
